Picked our first Rhubarb for the year yesterday, made a Rhubarb Crumble using the Recipe I posted here last year, just lovely. This is a new bed of Rhubarb I started about 2 years ago, great to see it doing so well. I found a Rhubarb Muffin Recipe that I have been dying to try out, hope to make it next week. If successful it would be a new item to add to our Bed and Breakfast menu.

Rhubarb Crumble

Rhubarb is in season now, and growing very well in the garden of Lake Avenue House. It is so easy to use, just pick, wipe, chop-that’s it ready to go. I find Rhubarb Crumble one of the easiest recipes to make. I usually cook this when I have something in for the dinner, a lovely treat with a spoonful of cream or ice cream.

Recipe

  • About 6 stalks of Rhubarb
  • About 3oz sugar
  • 5oz plain flour
  • 3oz butter
  • 1oz porridge oats
  • 3oz soft brown sugar

Method-Oven 180 C

  • Chop Rhubarb, place in pie dish, add sugar.

Cover and place the pie dish in the hot oven and cook for 10mins till rhubarb is just soft. (or place in a saucepan with 1 tbsp of water over a gentle heat, cook till just soft)

  • Place flour and butter in bowel and using fingers rub in.
  • Add oats and sugar, mix.
  • Sprinkle crumble mix over rhubarb and bake for 20-30 mins.
  • Enjoy
